Frequently Asked Questions about Cannelés

How do you pronounce cannelé? “Kah-Nuh-Lay”

What is a cannelé?
A cannelé is a traditional French pastry from the Bordeaux region of France. It’s usually flavored with vanilla bean and dark rum. They are best described as a baked custard pastry with a dark, caramelized exterior crust and a soft, creamy interior texture. They are a little bit hard to describe because there is nothing else really like a cannelé.

How long will cannelés last?
For the full cannelé experience - crispy and chewy outside with a soft, creamy interior, they are best the day they are baked or within the first 7-8hrs. Some prefer them best a day old at room temperature, when the exterior has softened a little bit. But to be safe, you can keep them in the refrigerator for up to 2-3 days or in the freezer for up to 2-4 weeks in an airtight container.

How should cannelés be stored?
For all flavors that do not have toppings or fruit curd fillings, you can store them in the refrigerator in their bakery box or an airtight container for up to 2-3 days. When out the refrigerator, let them warm up to room temperature before serving (usually 2-3mn) - You could also enjoy them right out the refrigerator.
However, If you plan to keep them longer than 2-3 days in the refrigerator, put them to an airtight container and store in the freezer for up to 2-4 weeks. Please see instructions below for how to eat the cannelés that have been frozen:

1- Take cannelé(s) out of the freezer and thaw in the refrigerator for up to 2hrs
2- Then bake cannelé(s) for 10mn at 350F
3- Let cannelé(s) cool down for 10mn at room temperature or 5mn at room temperature + 5mn in the refrigerator
4- Enjoy your cannelé(s)!!!

For all the flavors that have toppings or fruit curd fillings, we recommend the cannelé(s) to be stored in the refrigerator within a few hours of purchasing. When out the refrigerator, let them warm up to room temperature before serving or you can also enjoy them right out the refrigerator.

Do you ship out of state?
Yes, we ship cannelés out of state only between Mid October - Early March when temperature are preferably 50°F below outside. However, the customer is responsible for the shipping cost, which will be provided along with the item cost after the items have shipped.
